Ingredients

For the chicken:

  • 2 chicken breasts

  • 5 g (0.2 oz) salt

  • 1 g (0.0 oz) black pepper

For the filling:

  • 150 g (5.3 oz) mozzarella, shredded

  • 8 g (0.3 oz) parsley, finely chopped

  • 1 cup grated carrot

  • 2 g (0.1 oz) salt

  • 1 g (0.0 oz) black pepper

  • 50 g (1.8 oz) plain Greek yogurt

    Directions:

  • Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.

  • Prepare the chicken:

    • Slice each chicken breast

    • Pound the fillet until it becomes tender.

    • Season both sides with salt and pepper.

  • Make the filling:

    • In a bowl, combine shredded mozzarella, chopped parsley, grated carrot, plain Greek yogurt, salt, and pepper.

    • Mix until creamy and well combined.

  • Stuff the chicken:

    • Spoon the filling evenly into each chicken fillet and roll , secure the edges with toothpicks if needed.

  • Bake:

    • Place the chicken rolls in the baking dish (and cover with foil).

    • Bake for 20 minutes, then remove foil, top with remaining mozzarella, and bake another 5–10 minutes until golden and bubbly.

  • Serve:

    • Let rest for a few minutes before slicing.
