Matcha Pistachio Coconut Bites

Little green matcha-pistachio bites—soft, chewy, with just the right nutty crunch, all coated in smooth chocolate. Naturally sweet and packed with antioxidants, they’re the perfect pick-me-up for when you need a quick, satisfying boost that’s both tasty and good for you.

Ingredients:

  • 1 ½ cups shredded unsweetened coconut

  • ¼ cup pistachios

  • 2 tsp matcha powder

  • 2–3 tbsp maple syrup

  • 2 tbsp melted coconut oil

  • ½ tsp vanilla extract

  • Pinch of sea salt

  1. Optional coating:

    • ½ cup dark chocolate chips or bar (melted)

    • 1 tsp coconut oil (for smoother dipping)

Directions:

  1. Blend it up: In a food processor, pulse pistachios until finely chopped. Add coconut, matcha, maple syrup, melted coconut oil, vanilla, and salt. Blend until a sticky dough forms. It should hold its shape when pressed.

  2. Scoop + chill: Use a cookie scoop or your hands to form small mounds. Place on a lined tray and chill in the fridge or freezer for 15–20 minutes.

  3. Chocolate dip (optional but heavenly): Melt chocolate with coconut oil. Dip bottoms of each bite, or coat fully. Place back on the tray and refrigerate until set.
