I threw it together on a whim one day, craving something cozy but still light, and it’s been on repeat ever since. The warm cinnamon apples against the creamy chia pudding, with that little granola crunch in between? Pure bliss. It’s the kind of breakfast that makes you pause, take a breath, and feel like you’ve already won the day.
Prep Time: 10 minutes (plus at least 1 hour to chill)
Servings: 2 small or 1 large serving
Chill Time: Minimum 1 hour (overnight is best for thickest texture)
Storage: Best enjoyed fresh, but can be stored in the fridge up to 2 days without granola getting soggy (layer it in last-minute for crispiness!)
Ingredients :
For the chia pudding:
¼ cup chia seeds
¾ cup almond milk (or milk of choice)
½ tsp vanilla extract
1–2 tsp maple syrup (to taste)
For the cinnamon apples:
1 small apple, diced
½ tsp cinnamon
1 tsp coconut oil or butter
1–2 tsp maple syrup
For the layers:
½ cup granola (gluten-free if needed)
A handful of fresh (or frozen) raspberries
Directions:
Make the chia pudding: In a jar or bowl, mix chia seeds, almond milk, vanilla, and maple syrup. Stir well and let sit for 5 minutes, then stir again to prevent clumping. Refrigerate for at least 1 hour or overnight.
Sauté the apples: In a small pan over medium heat, add coconut oil, diced apples, cinnamon, and maple syrup. Sauté for 5–7 minutes until apples are soft and caramelized. Let cool slightly.
Layer it up: In a glass or jar, add:
A base of chia pudding
A layer of crunchy granola
More chia pudding
A layer of raspberries
Top with warm cinnamon apples
