Protein Cake

Soft, simple, and just sweet enough. This vanilla cake is what happens when a craving and self-control meet in the middle. Fluffy and warm with classic vanilla flavour, but still actually doing something for you — the kind of snack that keeps you going instead of sending you back into the pantry.

Made with VitaHustle protein powder — smooth, no chalky finish, no weird aftertaste, just cake with good intentions ;)

Ingredients

  • ½ cup cottage cheese

  • 1 tbsp Greek yogurt

  • ½ tsp vanilla extract

  • 1 tbsp sweetener of choice ( I went with Monk Fruit)

  • 1 scoop VitaHustle (vanilla) protein

Directions:

Combine all ingredients in a blender or small food processor until smooth.

  1. Pour the batter into a greased small oven-safe dish.
    Oven: Preheat to 350°F (175°C), bake 20–25 minutes until cooked through.

  2. Let cool slightly — it will firm up and get more cake-like.

Healthy Vanilla Butter Icing

Ingredients

  • 2 tbsp softened butter

  • 1–2 tbsp powdered or granulated healthy sweetener (monk fruit, allulose, or erythritol work best)

  • ½ tsp vanilla extract

  • 1–2 tsp milk, cream, or almond milk (to loosen it up)

  • Pinch of salt (optional but bloody amazing)

How to make it

  1. In a small bowl, whip the softened butter with a fork or hand mixer until creamy and pale.

  2. Add the sweetener and vanilla. Whip again until smooth and fluffy.

  3. Slowly add milk a teaspoon at a time until you get a soft, spreadable icing.

  4. Taste and adjust sweetness if needed.

It should be light, silky, and just sweet enough not tooth-aching frosting, perfect for your vanilla protein cake… a soft finish on a very good decision ;)
